Kymo

Kymo is an ongoing research and development initiative, targeted for launch in 2027, focused on building a specialised analytical system for the hospitality industry.

Unlike general-purpose AI platforms, Kymo is designed around domain-specific data structures, operational constraints, and behavioural patterns commonly found in cafés, restaurants, and small hospitality venues.

At its core, Kymo combines time-series analysis, probabilistic forecasting, and scenario modelling to analyse historical and real-time operational data, enabling more accurate insight into cost behaviour, demand fluctuation, and resource utilisation.

Kymo is currently under active development and validation, working alongside real-world hospitality data to refine accuracy, relevance, and interpretability before broader application.

Rather than relying on broad machine learning models, Kymo applies industry-calibrated variants of predictive modelling, including seasonal decomposition, demand forecasting models, and constraint-aware optimisation techniques. These models are trained and evaluated using hospitality-specific variables such as service hours, staffing density, inventory turnover, and transaction cadence.

The system also incorporates over-analysis layers: stress-testing predictions against multiple operational scenarios - allowing operators to understand not only expected outcomes, but also variance, risk exposure, and sensitivity to change.

Kymo is not being developed as a commercial AI product. It serves as a pilot model aimed at supporting SMEs in hospitality by reducing operational pressure and improving decision confidence. Through predictive insight, anomaly detection, and scenario evaluation, Kymo helps operators anticipate inefficiencies, manage cost volatility, and respond proactively to operational challenges.

The long-term objective is to contribute to more sustainable hospitality operations by providing analytical clarity - without replacing human judgement or introducing unnecessary complexity.
